Juniper berries (whole)
Juniper berries are the fruit of the evergreen juniper bush, a cypress plant that is widespread throughout Europe. Juniper grows particularly well on sandy soil and in the mountains and can be found throughout Europe. There are around 50 different types of juniper. Juniper berries are actually berry cones and berries and are therefore also called false berries. The round, 6 to 8 mm berries take two years to ripen. Their most important ingredient is essential juniper oil. Juniper berries have a strong, balsamic smell and taste bittersweet, resinous and slightly bitter. Juniper has become world famous as a spice for sauerkraut. It is also a popular addition to game dishes, sauerbraten, poultry and fish stock. Juniper berries are also often found in schnapps such as gin. Juniper berries can be dried and if stored in a dark, dry place, the berries can retain their aroma for years. This is because the berries release their aroma very slowly, so they should be cooked the whole time. Juniper is an important medicinal plant. Its ingredients have an antiseptic effect. The berries are diuretic and are therefore suitable for combating bladder and kidney problems. They also provide relief from rheumatism and gout.
